Sorry Matt and Everyone Else

I was going to do blogging last Sunday but I was unable to because I drove off with my mini laptop on top of my car in Santaquin and haven't been able to pick it up from my mom's. Thank you, Mom for getting up at 11:30 to drive around looking only to find it in the middle of Main street. Anyway the SD card with all the pictures and videos is in the broken laptop 31 miles from here. Unfortunately you all have to wait another week and a half to see anything that we have done in the last month.

Pretty much I feel really stupid about the laptop thing and I guess if you want to know that whole story you can ask me in person, but that is all I'm going to say on the blog. Sorry again for the long wait...Peace Out.

Restaurant Worthy Enchiladas

I admit I'm a recipe thief. I stole this recipe out of a cook book that looked through at Walmart called Worldwide Ward Cookbook: Mom's Best Recipes (I don't feel too bad, because I'm hoping to get this for Mother's day from Peter...Hint...Hint!) I cooked them up tonight and they are definitely worth making again. Although I don't recommend to often because they really aren't that healthy. Sorry there are no pictures available this time, but then again it's easy enough you can just imagine it. Anyway Enjoy!

Three Cheese Enchiladas

1 8-oz. Pkg. Cream cheese
2 Cups Cheddar cheese, shredded
2 Cups Mozzarella cheese, shredded
1 Cup Salsa ( I used medium Salsa Verde, but you can use what ever you want) (green salsa)
1 Pkg. Tortillas
Extra cheese and salsa for topping.

(I like to grease the pans to that when the cook they don't stick to the bottom.)

Mix Cheese and Salsa and spoon into tortillas. Roll and place into pan.
Bake at 350 for 35-45 minutes or until cheese is melted. Makes 8 servings.

After letting Melly try a bite of avocado sandwich I asked, "You like that Melly?" her response, "Oh yeah, it's good mommy".

If that girl knew what sarcasm was...that would be drenched in it.

The family grows

We have known for a little while that we would have a new addition to our little family. We have even told one or two of you but we decided to announce it here officially. We are way excited to welcome our next little miracle into the world.

But on our last visit we got another surprise, twins! It wasn't what we expected but we're very excited. Melynn loves everything about it; Alex on the other hand is still too little.
