Qdoba's Mexican Gumbo

The other night Peter got off of work early and we went to dinner to a place called Qdoba Mexican Grill and we got the same thing. The Mexican Gumbo. This is what it contains: white rice, pinto beans or black beans, Tortilla/taco soup, salsa/pico de gallo, topped with cheese, sour cream and tortilla chips/strips. And then you have the option of having Pork, Chicken, Steak, or just vegetarian. It is so good, but they don't have any in Utah. So I'm going to have to figure out a good recipe to make on my own.

I know this picture doesn't make it look that good. But I promise it is so good.
